  • Italian restaurants Carbone, Paper Moon and Sabatini all do the ‘diamond of the kitchen’ justice with their creative takes, while Skye’s twist on the humble chicken wing is to die for
  • Nicholini’s Mediterranean pistachio-encrusted turbot with white truffle shavings must also be one of the most exquisite fish dishes in Hong Kong right now

It’s that time of year to taste the diamond of the kitchen. Unfortunately, white truffle prices have shot up, so you might want to make sure your meal is truly memorable.

But worry not – we’ve scoured the city to find seven of the most unique offerings in Hong Kong. So whether you want to sample your truffles in a single dish, as part of a sparkling set menu, or just shaved over your favourite meal, we’ve got you covered.

1. Sabatini Ristorante Italiano

Sabatini’s white truffle menu is always highly anticipated each year. Not only do they stock high quality produce, but the menu is à la carte, allowing diners to make a choice between sampling one dish or enjoying a multi-course extravaganza.

We started with an organic scrambled egg in bread crouton with Hokkaido scallop and Alba white truffle (HK$788 or US$100), where the subtle egg aroma and smooth texture enhanced the fragrant tuber. For our mains, we opted for classic egg tagliolini in butter sauce with Alba white truffle (HK$788) – and it’s truly one of the best white truffles pastas in town. It’s tough for a chef to just sit back and let a product shine, but with an ingredient like white truffle, that is all you need to do.

For dessert, there really is nothing better than white truffle ice cream, but this year, the restaurant is trying something different with a Mont Blanc dessert and white truffle ice cream on the side (HK$388). The Mont Blanc was smooth and creamy, but it was the ice cream with truffle shavings that was still the highlight.

Overall, Sabatini serves classic Italian food and is not for those who are after avant-garde experiences.
