Pan-fried salt marsh lamb at Hugo's

Hugo's restaurant at the Hyatt Regency in Tsim Sha Tsui is featuring Rhug Estate salt marsh lamb until the end of the month. Dishes include pan-fried salt marsh lamb (above); and a tasting plate of braised lamb shoulder, pan-fried lamb loin and grilled lamb cutlet. Bookings: 3721 7733

Whisk at the Mira hotel in Tsim Sha Tsui is also serving Rhug Estate produce. The wild game selection is available until the end of October and includes whole pigeon on hay with green winter cabbage and sweet corn; fallow deer tartare with blackcurrants and wild herbs; and roe deer saddle for two with black potatoes and cranberries. Café Allegro at the Regal Kowloon Hotel in Tsim Sha Tsui has crab on the seafood dinner buffet until the end of the month. On the buffet are dishes of sautéed fried crab with light curry coconut sauce (left); deep-fried crab cake; and pumpkin congee with crab. On October 23, Violante Gardini of the Donatella Cinelli Colombini winery in Tuscany will host a dinner at Assaggio Trattoria Italiana in Wan Chai. The five-course wine dinner is HK$598 plus 10 per cent and includes cacio e pepe risotto with lardo, paired with the Donatella Cinelli Colombini Cenerentola 2001; and braised beef cheek with marinated chestnuts served with the Cenerentola 2008. Australian winemakers Nigel Gallop from the Fraser Gallop Estate, Barnaby Flanders from Garagiste and Peter Schell from Spinifex will host a wine dinner on October 24 at He Jiang restaurant in Wan Chai. The menu includes an appetiser platter with the Fraser Gallop Semillon-Sauvignon Blanc 2012; crisp mandarin fish with spicy garlic and chilli sauce with the Garagiste Merricks Chardonnay vintages 2012 and 2011; and braised pork with soy and dry-sautéed long beans with the Spinifex Lola 2012.
