Do not try this at home - not the liquid nitrogen bit, anyway. A popular element in molecular cuisine and mixology, liquid nitrogen recently received some unwelcome media attention when a girl in England had to have her stomach surgically removed after drinking a cocktail made with it.
It is, according to Pulp bar manager Dipen Dammarsing, perfectly safe if properly handled, and customers are advised to allow the cloud of vapour to diffuse before taking their first sip.
Nevertheless, for this cocktail, rather than use liquid nitrogen to create your own chocolate ice cream, use refrigerated chocolate cream chilled just short of freezing.
Dammarsing says he is not normally an ice cream fan, but after buying one for his girlfriend at a 7-Eleven it occurred to him he could make a "dessert cocktail" with it.
"I tried quite a few things and then finally came up with this one," he says of the Choco Melon.
"It's a frozen cocktail with Midori [melon liqueur] as the base, cacao liqueur as the modifier, and a chocolate cream topping, frozen with liquid nitrogen."
