How to choose ... a cocktail shaker

It is possible to make cocktails by mixing them in a glass but certain drinks seem right only when they're made in a cocktail shaker.

What is it? It's usually a three- (but sometimes two- and sometimes four-) part 'set' that's made of metal, although some or all of it can be glass. The ingredients and ice are poured into the base of the shaker, the top is fitted on and it's shaken vigorously and briefly. Because it's mixed so quickly, the ice doesn't have time to melt and therefore it doesn't dilute the liquid. The drink is poured into the glass through a cocktail strainer, which holds back the ice and other solid ingredients. The strainer is sometimes part of the shaker set; other times it's sold separately.

What are the differences? Although glass and metal shakers mix the ingredients equally well, metal retains cold more efficiently so it will chill down the drink more quickly.

What to look for: the parts should fit together well so the liquid doesn't leak out when the drink is shaken. Beyond that, you have only to choose the style and size (a four-drink shaker, or larger, can be difficult to hold securely in one hand). The design doesn't make the drink taste better, but because

the shaker is often on display, you want it to look good.
