Chef Umberto Bombana’s new restaurant Octavium oozes mystery
The new restaurant opened this month, and only a few details have been made public
Chef Umberto Bombana has quietly added another restaurant to his string of successful establishments. Named Octavium, the new restaurant opened in Central on July 1.
The only information released regarding his ultra-secretive restaurant is minimum. The interior has been solely designed by the chef, and it is being called his “baby”.

Unlike his other Hong Kong restaurant, 8 1/2 Otto e Mezzo Bombana, this one is smaller in size and will feature a more limited yet creative menu.
Highlights of its degustation menu include Japanese snapper carpaccio made with carrot, orange and fresh herbs, and homemade Sardinian gnocchi with traditional pork ragout and castelmagno cheese.
Octavium is being referred to by his staff as a private kitchen and as “Bombana’s laboratory”.
